Banana Pancakes – Grain Free – GAPS and Paleo Friendly!

I have been making banana pancakes for my children for years now. It is my secret to getting eggs into their diet, particularly when they are going through a phase of not enjoying eating eggs.

Breakfasts are pretty standard for us – usually just eggs and raw milk. We occasionally eat traditional oatmeal. About once a week or more though, I make banana pancakes for my kids. They are the healthiest version of pancakes that I know because they are nutrient dense, with eggs, bananas and cinnamon and no flour.

This breakfast is also great for the GAPS diet. To make this recipe GAPS legal, make sure you are using ripe bananas. Only fruit that is ripe is allowed on the GAPS diet.

Ingredients

Instructions

  1. Mash the bananas with a fork
  2. When the bananas are smooth, add in the rest of the ingredients and stir.
  3. Heat a cast iron skillet to medium heat. Add pastured lard or butter, or fat of choice on the pan.
  4. If using a cast iron skillet, keep an eye on the heat in case the fat begins to smoke. Cast iron heats up very quickly.
  5. Once the batter is smooth, pour into pan, making circles or preferred shapes.
  6. Flip when the batter begins to bubble.
  7. Remove from pan onto plate once fully cooked.
  8. Enjoy with extra butter. I don't think maple syrup is needed, since the bananas and cinnamon give a very sweet flavor!
