Do your children like to eat eggs? I came up with a delicious recipe for a mozzarella omelet that may motivate your children to eat eggs.

In our household, mozzarella cheese is our favorite. My youngest daughter, although not a picky child, started refusing to eat scrambled eggs or omelet style eggs. I began adding in mozzarella and she really liked to eat omelets again. Sometimes it is simply that children are tired of the same food day after day. As adults, we can get that way too. Breakfast is an easy no brainer meal for me in the mornings. I am fine with eating 2 sunny side up eggs every morning with warm raw milk. My children, however, like a variety here and there. It may be the same case with your kids.

Sometimes I make banana pancakes and sometimes I make traditional oatmeal. There is always the option of having a non-traditional breakfast (dinner for breakfast) like a roast or salmon. I find that I do best when I have eggs for breakfast in some form and beef or other red meat at least once per day. Let me know if that is also your experience in the comments below.

Instructions

  1. Turn on stove to medium heat and add lard or butter to cast iron skillet. Spread the fat around to make sure the pan is coated.
  2. Crack eggs in a mixing bowl and add seasonings or your own preferred seasonings to taste.
  3. Whisk ingredients together.
  4. Cut up a couple thick slices of mozzarella cheese and chop up into small pieces.
  5. Add into egg mixture and finishing mixing.
  6. Once the pan is heated, add in egg mixture. Turn the skillet back and forth to make sure the egg is evenly distributed.
  7. Turn off the heat and flip the mozzarella omelet over. Serve immediately.
