Becoming a 2nd time mom last year made me realize that I needed to develop quick and easy meal ideas. I had a lot of help the first several weeks after my youngest’s birth. I started to panic when I wasn’t sure how I would manage to do everything when things went back to the new normal.

Before my extra help ran out, I came up with a long list of quick and easy meal ideas. Many of these meals I have made frequently in the past, so I did not need to reference a recipe or google ideas. In my experience, choosing a meal or looking up a recipe and not knowing how to make it can take a lot of time. Time had become a luxury with more than one kid, so I was learning to use it as wisely as possible.

Quick and Easy Meal Standards

My criteria for developing this list of quick and easy meal ideas was that most things had to be simple, like a template. The quick and easy meal ideas could recipes, but they could not be overly complicated and could be learned quickly without a recipe. They also had to take little time or effort to prepare.

Tips for Making the Food Healthy

  • Use only healthy cooking fats and avoid vegetable oils
  • Try to buy pasture raised meats, eggs and dairy and wild caught seafood as your budget allows
  • Eat organ meats often, and/or sneak them into ground meat dishes or soups
  • Buy organic when possible and avoid GMOs
  • Make or buy organic sprouted and/or sourdough bread
  • Purchase organic and/or sprouted corn tortillas
  • If making pasta, purchase Jovial pasta since they soak all their grains for 48 hours before milling into pasta and flour
  • Buy or make sourdough crackers, like Jovial
  • Use only fresh foods, but if using canned foods, purchase ones without additives or preservatives

Quick and Easy Meal Ideas

  • Baked salmon with vegetables (asparagus, broccoli, cabbage, spinach, greens, et.c), rice or baked potatoes or potato wedges/sweet potatoes
  • Sausage links, patties or ground sausage mixed with rice (on the side: ground mustard, peppers and onions)
  • Baked whole chicken or thighs/legs with vegetables, baked potatoes, rice or gallo pinto
    • Leftovers: chicken soup, tacos, stir fry, pasta, fajitas, quesadillas
  • Beef roast in crock pot with vegetables and potatoes
    • Leftovers: beef soup, tacos, stir fry, pasta, fajitas, quesadillas
  • Pasta with ground beef sauce or sausage
  • Mac and cheese with barbecue pork/pulled pork mixed in or on the side, with broccoli or other vegetable
  • Cabbage rolls (with ground beef, chicken or pork)
  • Quick Indian dinner (chicken/beef/lamb/pork) with rice, vegetable side(s), lentils or split peas
  • Quesadillas
  • Meatloaf with organ meats
  • Meatballs (Asian or Italian)
  • Korean ground beef or recipes from Korean Paleo or Asian Paleo cookbooks
  • Soups/recipes from The First 40 Days or Nourishing Diets books
  • Cream sauce with pasta, sausage, shrimp, chicken, spinach, spaghetti squash, etc.
  • Fish tacos with cod, perch or shrimp
  • Air fryer – cod pieces, french fries, other side
  • Tuna melts with sauerkraut, salad or other ferments
  • Tuna sandwiches with cheese and avocado
  • Sardines with cheese/salad/avocado
  • Salmon cakes/croquettes with yogurt sauce/cream cheese
  • Pulled pork
    • Tacos and soup as leftovers from this
  • Chili with liver or heart
    • Loaded potatoes with chili and cheese on top for leftovers
  • Baked potato soup in the Vita Clay
  • Tomato soup in Vita Clay with grilled cheese with bacon or deli meat inside
  • Smoked salmon/cream cheese/capers/dill on slices of baked buttered bread
  • Burritos
  • Stir fry
  • Scandinavian bowls – sardines, herring, cod or other fish/healthy mayonnaise (with avocado oil)/rice/potatoes/dill pickles, sauerkraut or other ferment in a bowl (ingredients topped on rice)
  • Chicken parmesan
  • Fried rice with leftover meat, salmon or fish, or ginger bacon fried rice
  • Pan fried breaded chicken or fish
  • Hamburgers
  • French onion soup
  • Avocado toast with fried egg(s) on top
  • Quiche/frittata
  • Eggs and cheese on sprouted English muffin with pickles/sauerkraut, olives and/or salami on the side
  • Liverwurst or salami with sourdough bread and cheeses/ferments
  • Beef heart curry
  • Easy butter chicken with rice and vegetables
  • Stuffed bell peppers or stuffed squash with meat and cheese (acorn, butternut, zucchini boats, delicata, spaghetti)
  • Tacos
    • Leftovers: meat on top of baked potatoes (loaded with toppings)
  • Fajitas
  • Tostadas (fried corn tacos topped with everything used for tacos)
  • Sofrito (make and freeze in blocks to use to season meat, fish or vegetables
  • Beef picadillo (can be used on other meat or season lentils this way)
  • Crockpot Mexi chicken soup in slow cooker: 4 chicken breasts or other chicken cut, 32 oz chicken broth, 16 oz shredded cheese, 30 oz salsa, sliced zucchini or spinach (add vegetables at end). Put on high for 4 hours or on low for 6 hours. Shred chicken and eat.
  • BBQ ribs or BBQ pulled pork with vegetables and potatoes
  • Honey garlic chicken stir fry
  • Crock pot rotisserie chicken – season whole chicken or chicken cuts generously with salt and pepper, no liquid – low for 7 hours
  • Kebabs – lamb, chicken, beef, pork, shrimp, ground beef or other ground meat, etc.
