All I have to do is stick meat, vegetables, spices and a fat to flavor it all. That is really it! It ends up being a delicious dinner every time with the meat being very tender.
This recipe can be used as a template for you. It is just like I said – you can use any meat or vegetable. It can be elk, deer, bison, whatever kind of roast you have on hand.
Anything Italian is close to my heart because that is part of my heritage. Today I am sharing a recipe for Italian chicken.
- 1 pasture raised chicken
- 1-2 tbsp organic oregano
- 2 tsp organic thyme
- 2 tsp organic basil
- 2 tsp organic rosemary
- 1 tbsp organic garlic powder
- 2 tsp organic ground fennel
- 1 bay leaf
- Sea salt
- Grass fed butter
- 1 jar of green olives (make sure there aren’t any bad preservatives in it!)
- 1 cup chopped onion
- 1 cup organic chopped carrots
- 1 cup organic chopped celery
- 1 cup chopped organic potatoes
- Measure out all your spices first.
- Sprinkle sea salt and black pepper all over the chicken skin.
- Mix the remaining spices together (except for the bay leaf) and rub all over the chicken skin. Leave some of the spice mix to sprinkle on the vegetables too.
- Chop up the vegetables.
- Place the chicken into your slow cooker.
- Distribute the chopped vegetables all around the chicken.
- Open the jar of olives and drain the liquid into the sink. Pour the olives around the chicken.
- Sprinkle the remaining spices over the vegetables and sprinkle sea and salt and black pepper over them too.
- Put pats of butter all over the top of the chicken and the vegetables - be generous!
- Place the bay leaf into the slow cooker and put the cover on.
- Turn your slow cooker on high for 4 hours.
- Dinner will be ready in 4 hours. The meat will be falling off the bone. Bon appetite!
Depending on the size of your family, you may have a lot of extra chicken meat. You can use the extra meat in a number of ways: chicken sandwiches, homemade pad thai, stir fries, chicken salad, chicken soup – the sky is the limit!
